Samgyeopsal, grilled pork korean style

Eating korean bbq is a very social way of eating you sit arround a table top grill and share food. You grill the food you want and help each other out, you talk and eat. It feels like you pick at the food and hardly eat anything, but you feel full.

I had a few friends over for korean bbq last weekend, we were 7 adults and 4 children. I had prepared 1,5 kg(3 lb) chicken breasts, 2 kg pork(4 lb) and 1 kg(2 lb) beef plus a lot of side dishes, by the end of the meal there was less than 1 kg pork left. The comment arround the table was that they should eat this more often, they were really full, but hardly ate anything. I said wrong we ate a lot. The thing is we sat arround the table we ate and enjoyed ourselves and hardly noticed the time and amount of food consumed. I am not saying that over eating is good for you, but sometimes in good company and healthy clean eating, you can indulge yourselves. Yes I would dare say that korean food is healthy and good for you. My children eat more than twice as much vegetables when we eat this way.
When lived in South Korea a few years ago I tried to learn the korean language and I learnt that the old word for family means people who eat together.
Korean bbq
You have many different korean bbqs and a popular one in Korea is Samgyeopsal(삼겹살), pork belly and often eaten for supper.  It consists of slices of pork. It is not common to marinate the meat, but you can if you want, you just add salt and pepper while you grill. The grilled meat is usually served with Ssamjang (쌈장 fermented bean paste with chili and garlic), Vegetables and lettuce leaves. One takes a leaf, dip the grilled meat in Ssamjang and load it onto lettuce leaf along with other goodies, then roll it up and eat.Korean bbqSamgyepsal consists of three words, Sam (three) gyeop (layer) sal (meat), with reference to the three layers visible on the pork belly.

What you need for this type of grilling is:

Table grill
Pork belly enough for everyone invited to eat.
Ssamjang
Lettuce
Perilla leaves,
Kimchi, see HERE for recipe
bean sprouts with a little sesame oil and salt
Green chili, for extra heat
Spring onion salad in a ponzu like sauce

Pozu-ish sauce

0,5 dl lime juice or lemon, you may well mix the two well.
0.75 dl light soy sauce
2 tablespoons mirin
2 tablespoons rice vinegar
