Scrambled eggs with tomato and chives

Yes I know that we are well into the first week of 2017, but better late than never:)

I haven’t blogged much lately, my excuse is that I have gone back to school and haven’t managed to organize my time so that there is enough time to blogging. Or maybe is it just the simple fact that I haven’t had time to cook dinner. No, it is just that I have not had the capasity  to think up anything that I wanted to post on my blog.

When I started blogging about food a few years ago it was to log our daily meals, I did not even include recipes at first, the challenge back then was not to make the same for dinner not more than two times. Today as a single mum and a student I have to think a little economy and nutrisious and as a diabetic I have to think healthy.

With economy and health in mind I will start this blog year with something as simple as scrambled eggs with chopped tomatoes and chives served with homemade crisp bread.. Without the knowledge of a nutritionist, I still consider this as healthy and nutritious and, not least, easy and affordable.

Recipe for Crisp Bread HERE

Light lunch for 1-2 persons.

3 eggs
1 chopped tomato
Butter for frying
Chives
Salt and pepper as desired

Chop the tomato and saute the bits in a pan with a little butter on medium heat. Whisk the eggs, add salt and pepper as desired and pour the eggs into the pan with the tomatoes, Cook mixture until you get the consistency you want. Sprinkle chopped chives on top and serve this with some nice crip bread, bread or rolls.
