Raggmunkar, swedish potato pancakes

Feeling a little peckish I looked through the fridge and seeing what I had on hand I felt like making potato pancakes, swedish potato pancakes like the ones I had on Gotland last year. I could raggmunkar and also make something for a challenge Mia from Green Bonanza started in September. This is a challenge for Norwgian foodblogers, each month one foodbloger will be in charge by choosing the theme of the month and follow up on the other bloggers. Glutenfree Jaffa cakes

These chocolaty, spongy and orangy yummyness are based on the cakes that bares thesame name, but with minor differences. I used marmalade and made them gluten-free.

Crunchy sweet potato fries

Have you tried to make crispy sweet potato fries? No matter how many times you google you can’t seem to find THE right recipe and many of the recipes are almost the same.

When baking or frying sweetpotatoe you might get a stiffer outer layer that soon softens, but it is not crunchy. The reason for this is that sweet potatoes does not contain the same tye of starch as the regular potato does, so to get the strips nice and crunchy you need to cheat a bit.

Refreshing Icetea

I got inspired to make iced tea after my little trip to Flanders last week, most of the restaurants and cafés served iced tea.

Iced tea is a grateful and cheap drink to make, you can make buckets of eat for a low cost. You need some tea bags and maybe a few other ingredients to garnish or to enhance the flavour, but most important of all loads of ice.

Lukumades, greek doughnuts

 

Loukoumades,  traditional Greek dougnuts.

Loukoumades are little bite-sized fluffy sweet honey puffs, which are deep fried to golden and crispy perfection. Greek donuts are traditionally served soaked in honey syrup, sprinkled with cinnamon and garnished with chopped walnuts or toasted sesame seeds. These doughnuts I took a little west and coated them in sugar and lavender.

Persimmon, cinnamon and ginger drink, Sujeonggwa

 

When we ate korean bbq during the warmer months in South Korea we always got a small cup of icy cold drink at the end of the meal. Sujeonggwa 수정과 a sweet, lovely refreshing cold drink with the taste of cinnamon, ginger, a hint of persimmon and always topped with three pine nuts, they say it helps your digestive system.
